Kaylin’s No-Knead Bread: A 2-Hour Masterpiece

The perfect bread to complement a charcuterie board, this no-fuss recipe gives you a soft, warm, and crunchy loaf—ideal for any platter. Customise it with extras like tomatoes, chorizo, or cheese, or enjoy it as is. Either way, it’s bound to impress!

What You’ll Need:

  • Large mixing bowl
  • Wooden spoon
  • Knife
  • Bread tin (or parchment paper if you don’t have one)

Ingredients:

  • 7g yeast (1 sachet)
  • 3 cups lukewarm water
  • 4-5 cups plain flour (plus extra for dusting)
  • 1 tsp salt
  • 1 tsp sugar

Optional Extras:

  • Diced tomatoes
  • Diced chorizo
  • Cubed cheese
  • Garlic granules
  • Cajun seasoning
  • Black pepper
  • Aromat
  • Chilli flakes

Let’s Get Baking:

  1. Start with the Yeast
    In a large bowl, dissolve the yeast in 3 cups of lukewarm water. Let it rest for about 15 minutes while the yeast activates and “blooms.” This is the perfect time to chop any extras you’re adding.
  2. Mix in the Flour
    After the yeast has bloomed, gradually add flour one cup at a time, stirring well between each addition. This helps create air bubbles and prevents clumps. The dough should be sticky, clinging to the spoon (and your fingers!).
  3. Add Your Extras
    Gently fold in your chosen extras bit by bit to keep the dough light and full of air. You want an even distribution of flavours without deflating the dough.
  4. Let It Rise
    Cover the bowl with a cloth and leave the dough to rise for around 90 minutes. By the end of this rest, it should have doubled in size.
  5. Preheat the Oven
    About 20 minutes before the dough has finished rising, preheat your oven to 210°C.
  6. Shape the Loaves
    Heavily flour your work surface to prevent sticking. Slowly tip the dough onto the surface, taking care not to rush this step—you want to preserve those precious air bubbles. Once the dough is out, use a wet knife to cut it into 3 or 4 loaves.
  7. Prepare for Baking
    Transfer the loaves to a floured bread tin or a parchment-lined baking tray. Wet or flour your hands to handle the sticky dough more easily. Add any extra toppings or a light dusting of flour, if desired.
  8. Bake to Perfection
    Place the loaves in the oven and bake for 20-25 minutes, until the bread rises and develops a golden-brown crust. Your kitchen will smell amazing!
  9. Enjoy!
    Let the bread cool enough to handle. Then, break into it and savour the delicious, warm, crunchy goodness.
