Tracey’s No-Fuss Chocolate Cheesecake: Autumn Edition

As the autumn nights draw in and the air turns crisp, why not treat yourself to an easy, no-bake chocolate cheesecake? This indulgent dessert is perfect for those chilly UK evenings when you want something comforting without the hassle. With no baking required and simple steps like smashing up some digestives, it’s the ultimate stress-free treat. After a day of brisk walks, a trip to the local market, or just staying cozy at home, you can whip this up in no time and let the fridge do the rest. Perfect for a sweet reward after a busy autumn day!

How to Make the Base:

1. Smash up the biscuits—pop them in a food bag and let loose with a rolling pin! (Bonus stress relief for those busy autumn days). You can also use a food processor if you prefer.

2. Melt the butter and stir it into the biscuit crumbs. Press the mixture firmly into the bottom of a lined 8-inch tin and refrigerate.

How to Make the Topping:

1. Melt the white chocolate (a quick zap in the microwave does the trick, but be careful not to overheat). Let it cool slightly.

2. In a large bowl, whisk together the mascarpone and icing sugar. Slowly add the cream while whisking until the mixture becomes light and fluffy.

3. Once the chocolate is cool but still pourable, fold it into the mascarpone mixture. Spread this luscious topping over the biscuit base and smooth the surface.

4. For an autumnal touch, dust with cocoa powder using a paper doily to create a pretty pattern.

Chill in the fridge until you’re ready to serve.
